This extra premium sake is aged in "Meijukura", making it more well-rounded and full-bodied.
We are the only brewery with an aging cellar inside a mine in the Kansai region.
The perfect conditions for maturing Japanese rice wine are "stable temperature", "shaded area", and "no vibration".
"Meijukura" located inside the old Akenobe Mine has a temperature of around 10℃ year-round.
The rice wine is kept in darkness.
While aging, they are not subject to vibrations in any way.
It is the perfect environment.
